Instructions

  1. Cook Penne Pasta: Cook penne pasta according to package instructions until al dente. Drain and set aside.
  2. Cook Chicken: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 6–8 minutes. Remove chicken and set aside.
  3. Sauté Vegetables: In the same skillet, add remaining olive oil. Sauté onion and garlic until softened, about 2–3 minutes. Add mushrooms and cook until they release their moisture and begin to brown, about 5 minutes. Add asparagus pieces and cook for 3–4 minutes until tender-crisp.
  4. Make the Sauce: Pour in heavy cream and chicken broth, stirring to combine. Bring to a simmer, then reduce heat and stir in Parmesan cheese and Italian seasoning. Cook until sauce thickens slightly, about 3–5 minutes.
  5. Combine and Serve: Return chicken to the skillet and toss with the sauce. Add cooked penne pasta and mix well to combine. Adjust seasoning with salt and pepper as needed. Garnish with fresh parsley and serve warm.
