- 1 tablespoon tomato paste
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

- 2 cups baby spinach
- Chopped fresh basil for garnish
Instructions
- Cook Chicken: Heat olive oil in a large pot, season chicken, and sauté until browned. Set aside.

- Finish Soup: Return chicken to the pot, add cream, Parmesan, tomato paste, and cornstarch slurry if using. Simmer until slightly thickened. Add spinach and cook until wilted.
