Ingredients
Scale
Main Ingredients
- 3 tablespoons olive oil, divided
- 1 red bell pepper, thinly sliced
- 1/2 large red onion, thinly sliced
- 2 cloves garlic, minced
- 3 large boneless, skinless chicken breasts, cut into 1-inch chunks
- 1 packet fajita seasoning (or 2 1/2 tablespoons homemade)
- 3 tablespoons all-purpose flour
- 1 (14.5-ounce) can chicken broth
- 1/2 cup heavy cream
- 1 pound rotini pasta, cooked al dente
For Garnish
- Sliced green onions
- Crushed tortilla chips
Instructions
- Sauté vegetables: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the thinly sliced red bell pepper, red onion, and minced garlic. Sauté the vegetables for about 5 minutes, or until they are softened but still vibrant. Once cooked, remove the vegetables from the skillet and set aside.
- Brown chicken: Add the remaining 1 tablespoon of olive oil to the same skillet. Add the chicken breast chunks and cook, stirring frequently, until the chicken is browned on all sides and cooked through.
- Return vegetables and season: Return the sautéed vegetables back into the skillet with the chicken. Sprinkle the fajita seasoning packet (or homemade seasoning) and all-purpose flour over the mixture. Stir well to ensure everything is evenly coated with the seasoning and flour.
- Make sauce: Pour in the can of chicken broth and the heavy cream. Bring the mixture to a boil, then reduce the heat to a simmer. Allow the sauce to cook for about 10 minutes, stirring occasionally, until it thickens and develops a creamy texture.
- Add pasta: Stir the cooked rotini pasta into the skillet, combining it thoroughly with the creamy chicken and vegetable sauce. Cook for an additional minute to heat everything through properly.
- Serve: Remove from heat and garnish with sliced green onions and crushed tortilla chips for added texture and flavor. Serve immediately for the best experience.
Notes
- For a healthier twist, substitute heavy cream with half-and-half or a non-dairy cream alternative.
- You can prepare the fajita seasoning homemade using paprika, chili powder, cumin, garlic powder, onion powder, oregano, salt, and pepper.
- Make sure not to overcook the pasta; al dente texture works best to hold up in the creamy sauce.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently on the stovetop or microwave.
- For added heat, sprinkle some crushed red pepper flakes over the dish before serving.
