  • 2 cups cooked chicken (shredded or diced)
  • 2 tablespoons butter
  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1/2 cup chicken broth
  • 1/2 cup sour cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1/8 teaspoon nutmeg
  • 3 cups fresh baby spinach (chopped)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat the oven and prepare the dish: Preheat the oven to 375°F and lightly grease a 9×9-inch or similar-sized baking dish.
  2. Sauté the onion and garlic: In a skillet over medium heat, melt the butter and sauté the onion until soft, about 3–4 minutes. Add the garlic and cook for 1 minute more.
  3. Make the sauce: Stir in the flour and cook for 1 minute. Gradually whisk in the milk and chicken broth until smooth. Cook until the sauce thickens, about 3–5 minutes. Remove from heat and stir in sour cream, salt, pepper, thyme, and nutmeg.
  4. Add spinach and chicken: Stir in the chopped spinach until wilted, then fold in the cooked chicken, half of the mozzarella, and Parmesan.
  5. Assemble and bake: Pour the mixture into the baking dish. Top with remaining cheese and breadcrumbs if desired. Bake for 20–25 minutes until golden and bubbly. Let rest before serving.
