Sauce
- 2 tablespoons butter
- 2 tablespoons flour
- 3 cloves garlic, minced
- 1 cup milk
- 8 ounces cream cheese
Cheese and Chicken Mixture
- 1 1/2 cups shredded mozzarella cheese, divided
- 1/4 cup grated Parmesan cheese
- 1 1/2 cups shredded chicken (rotisserie chicken works great)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Make sauce: Preheat your oven to 350°F (175°C). In a skillet over medium-high heat, melt the butter. Whisk in the flour to create a smooth roux, then add the minced garlic and milk, whisking continuously until smooth.
- Add cream cheese: Reduce the heat to low and stir in the cream cheese until the sauce is completely smooth and creamy.
- Add cheese and chicken: Mix in 1 cup of shredded mozzarella, Parmesan cheese, shredded chicken, Italian seasoning, salt, and pepper until well combined.
- Bake: Transfer the mixture to a baking dish and top with the remaining 1/2 cup mozzarella cheese. Bake for 20-25 minutes or until the top is golden brown and bubbly.
- Serve hot: Serve the dip warm with crostini, broccoli, or your favorite fresh vegetables for dipping.
Notes
- Using rotisserie chicken makes preparation faster and adds great flavor.
- For a spicier kick, add a pinch of red pepper flakes or diced jalapeños.
- This dip can be prepared a day ahead; assemble and refrigerate, then bake before serving.
- Ensure the cream cheese is softened for easier melting and smoother sauce.
