  • 1 tablespoon Cajun seasoning

  • 1 small yellow onion (diced)
  • 1 red bell pepper (diced)
  • 2 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 ounces cream cheese (cubed)
  • 1 1/2 cups uncooked small pasta (like ditalini or elbow)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Prepare the Chicken: In a large pot or Dutch oven, heat olive oil and butter over medium heat. Season the chicken pieces with Cajun seasoning and cook for 4–5 minutes until browned and mostly cooked through. Remove and set aside.
  2. Sauté Vegetables: In the same pot, add the onion and bell pepper and sauté for 3–4 minutes until softened. Stir in the garlic and cook for 1 minute more.
  3. Add Broth and Cheese: Pour in the chicken broth and bring to a simmer. Add the cream cheese and stir until melted and smooth. Return the chicken to the pot, then add the uncooked pasta.
  4. Simmer: Simmer uncovered for 10–12 minutes, stirring occasionally, until the pasta is tender and the soup thickens.
  5. Finish and Serve: Stir in the heavy cream and Parmesan cheese, season with salt and pepper, and simmer for 2–3 more minutes. Serve hot, garnished with chopped parsley.
