Potatoes:

Cheese Sauce:

- 3 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 2 garlic cloves, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon thyme
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded Gruyère cheese
- ½ cup grated Parmesan cheese
Garnish:
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven: Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
- Prepare the sauce: In a medium saucepan, melt the butter, stir in flour to form a roux, then gradually whisk in milk and cream. Cook until thickened, about 5 minutes. Stir in garlic, salt, pepper, and thyme.
- Add the cheeses: Remove the sauce from heat and mix in 1 ½ cups cheddar and ½ cup Gruyère until melted.
- Layer the potatoes: Spread a layer of potato slices in the baking dish, pour cheese sauce over, and repeat layers. Top with remaining cheeses.
- Bake: Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 25–30 minutes until golden and bubbly. Let rest 10 minutes before serving. Garnish with parsley.
