Chicken:

Cranberry Sauce:

  • 1 cup whole berry cranberry sauce
  • 1/2 cup French or Russian salad dressing
  • 1/2 packet dry onion soup mix
  • 1 tablespoon Dijon mustard (optional)
  • 1 tablespoon brown sugar (optional)

Garnish:

  • Chopped parsley

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Season and sear the chicken: Season chicken breasts with salt and pepper. Sear in a skillet with olive oil until lightly browned.
  3. Prepare the cranberry mixture: Combine cranberry sauce, salad dressing, onion soup mix, Dijon mustard, and brown sugar in a bowl.
  4. Bake: Place chicken in the baking dish, pour cranberry mixture over the top, cover with foil, and bake for 25 minutes. Uncover and bake for an additional 10–15 minutes.
  5. Garnish and serve: Garnish with chopped parsley before serving.
