Instructions

  2. Sauté Aromatics: Stir in the diced onion and minced garlic to the pot. Cook, stirring occasionally, until the onions are translucent and the garlic is fragrant, about 2 minutes, which will build the flavor base for the stew.
  3. Add Remaining Ingredients: Add the peeled and diced potatoes, canned diced tomatoes with their juice, drained pinto beans, corn, beef broth, tomato paste, chili powder, smoked paprika, dried oregano, and season with salt and black pepper to taste. Stir thoroughly to combine all the ingredients evenly.
  4. Simmer the Stew: Bring the mixture to a boil over high heat, then reduce the heat to low to maintain a gentle simmer. Cover the pot and cook for 25–30 minutes, stirring occasionally, until the potatoes are tender and the flavors have melded together beautifully.
