Ground Beef Mixture:
- 1 pound ground beef
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) whole kernel corn, drained
- 1 can (10.5 ounces) condensed cream of mushroom soup
- 1/2 cup sour cream
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1 1/2 cups shredded cheddar cheese, divided
Tater Tot Layer:
- 1 bag (30 ounces) frozen tater tots
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Cook the ground beef: In a large skillet over medium heat, cook the ground beef until browned. Add diced onion and garlic, sauté until softened.
- Combine ingredients: Drain excess grease. Stir in corn, cream of mushroom soup, sour cream, salt, pepper, paprika, and 1 cup of cheese. Mix well.
- Assemble the casserole: Spread mixture in a 9×13-inch baking dish. Arrange tater tots in a single layer on top.
- Bake: Bake for 35-40 minutes until tots are golden brown. Sprinkle remaining cheese on top, bake for 5 more minutes.
- Serve: Let cool slightly before serving.
Notes
- You can substitute cream of mushroom soup with cream of chicken or a homemade version.
- Add chopped green chiles or jalapeños for a spicy kick.
