Description

Cowboy Butter Chicken Linguine is a quick and flavorful pasta dish featuring tender chicken breasts cooked in a skillet, tossed with linguine and rich, savory Cowboy Butter, finished with Parmesan cheese and fresh parsley. It’s perfect for a satisfying weeknight dinner in just 25 minutes.

Ingredients

Scale

Pasta

  • 8 oz linguine

Chicken

  • 2 boneless, skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste

Sauce and Garnish

  • 1/2 cup Cowboy Butter
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook linguine: Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente. Drain the pasta and set it aside.
  2. Season and cook chicken: Pat the chicken breasts dry, then season both sides generously with salt and pepper. Heat a skillet over medium heat and cook the chicken breasts for about 6-7 minutes per side until the center is no longer pink and they are fully cooked through.
  3. Slice chicken: Remove the cooked chicken breasts from the skillet and slice them into thin strips for easy mixing with the pasta.
  4. Melt Cowboy Butter and combine: In the same skillet, reduce heat to low and melt the Cowboy Butter. Add the cooked linguine, sliced chicken, and grated Parmesan cheese to the skillet. Toss everything together thoroughly to coat the pasta and chicken evenly with the butter and cheese.
  5. Garnish and serve: Plate the linguine and chicken mixture while hot, garnishing with freshly chopped parsley for a burst of color and added freshness.

Notes

  • For an extra kick, add a pinch of crushed red pepper flakes when melting the Cowboy Butter.
  • Use freshly grated Parmesan for the best flavor and texture.
  • Make sure not to overcook the chicken to keep it juicy and tender.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
  • Reheat gently on the stovetop or microwave before serving.
