Cheesecake Filling

  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup heavy cream (to whip)
  • 1 cup sugar (divided)

JELLO Flavors

  • 1 tablespoon JELLO – Berry Blue (plus extra for more color if desired)
  • 1 tablespoon JELLO – Cherry (plus extra for more color if desired)
  • 1 tablespoon JELLO – Lemon (plus extra for more color if desired)
  • 1 cup boiling water

Topping

  • Cotton candy (for topping)


Instructions

  1. Prepare the Crust: Combine the crushed graham crackers with sugar in a mixing bowl. Pour in melted butter and stir until the mixture resembles wet sand. Firmly press this mixture into parchment-lined springform pans to form the crust. Place the pans in the freezer to set while preparing the filling.
  2. Whip the Cream: In a large bowl, add the heavy cream and 1 tablespoon of sugar. Using an electric mixer, whip on medium speed until thickened, then switch to high speed until stiff peaks form. Transfer the whipped cream to a separate bowl and refrigerate it.
  3. Prepare the Cream Cheese Base: Beat the softened cream cheese on medium speed until smooth. Add the remaining sugar (approximately 3/4 cup) and blend until fully incorporated and creamy.
  4. Combine Cream Cheese and Whipped Cream: Remove whipped cream from the refrigerator and gently fold it into the cream cheese mixture until smooth and fully blended. Return this combined filling to the refrigerator while prepping the JELLO mixtures.
  5. Prepare the JELLO Flavors: Place 1 tablespoon each of Berry Blue, Cherry, and Lemon JELLO powders into separate small bowls. Pour about 1/3 cup boiling water into each bowl, stirring each until fully dissolved. Let the mixtures cool to room temperature without setting.
  6. Color and Flavor the Cheesecake Fillings: Divide the cream cheese filling evenly into three bowls. Add one JELLO mixture to each bowl and stir well. Add extra JELLO powder if a more vibrant color is desired, mixing until fully combined.
  7. Layer the Cheesecake Filling: Remove the crust from the freezer. Spread the blue cheesecake layer evenly over the crust. Return to the freezer for about 45 minutes until just set. Keep the other two fillings refrigerated during this time.
  8. Add Remaining Layers: Once the blue layer is set, gently spread the cherry layer over it. Freeze again until set. Finally, spread the lemon layer evenly on top and freeze the entire cheesecake for at least 4 hours or overnight for best results.
