Description
This Cornbread Taco Bake combines the flavors of a classic taco in a comforting casserole dish. A layer of seasoned ground beef, beans, and corn is topped with a golden cornbread crust and plenty of melted cheese. Perfect for a weeknight dinner or casual gathering.

For the Beef Mixture:
- 1 pound ground beef (or ground turkey)
- 1 small onion, diced
- 1 packet taco seasoning
- ½ cup water
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup corn kernels, frozen or canned and drained
- 1 (10 oz) can diced tomatoes with green chiles, drained
For the Cornbread Layer:
- 1 (8.5 oz) box cornbread mix, plus ingredients listed on the box (usually egg and milk)
For Topping:
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Cooking spray
- Optional toppings: sour cream, chopped cilantro, diced tomatoes, jalapeños
Instructions
- Preheat oven: Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish with cooking spray.
- Cook Beef: In a skillet, cook ground beef and onion until browned. Drain excess grease. Add taco seasoning, water, black beans, corn, and tomatoes. Simmer.
- Prepare Cornbread: Mix cornbread batter according to package instructions.
- Assemble: Spread beef mixture in the baking dish. Pour cornbread batter over and top with cheeses.
- Bake: Bake for 25–30 minutes until golden brown. Let cool for 5 minutes before serving. Add optional toppings.
Notes
- For a spicier version, use hot diced green chiles or pepper jack cheese.
- This dish can be prepared ahead of time and baked just before serving.
