Description

This Cornbread Taco Bake combines the flavors of a classic taco in a comforting casserole dish. A layer of seasoned ground beef, beans, and corn is topped with a golden cornbread crust and plenty of melted cheese. Perfect for a weeknight dinner or casual gathering.

Ingredients

Scale

For the Beef Mixture:

  • 1 pound ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 packet taco seasoning
  • ½ cup water
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn kernels, frozen or canned and drained
  • 1 (10 oz) can diced tomatoes with green chiles, drained

For the Cornbread Layer:

  • 1 (8.5 oz) box cornbread mix, plus ingredients listed on the box (usually egg and milk)

For Topping:

  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Cooking spray
  • Optional toppings: sour cream, chopped cilantro, diced tomatoes, jalapeños

Instructions

  1. Preheat oven: Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish with cooking spray.
  2. Cook Beef: In a skillet, cook ground beef and onion until browned. Drain excess grease. Add taco seasoning, water, black beans, corn, and tomatoes. Simmer.
  3. Prepare Cornbread: Mix cornbread batter according to package instructions.
