- 2 large eggs
- 1 3/4 cups milk (dairy or non-dairy)

Streusel Topping:
- 1/3 cup rolled oats
- 1/4 cup almond flour or all-purpose flour
- 1/4 cup coconut sugar or brown sugar
- 1/2 teaspoon cinnamon
- 3 tablespoons cold butter (cubed)
Instructions
- Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- Mix Dry Ingredients: In a large bowl, combine oats, coconut sugar, baking powder, cinnamon, nutmeg, and salt.
- Whisk Wet Ingredients: In another bowl, whisk eggs, milk, melted butter, and vanilla. Pour into the dry mix and stir.
- Fill Baking Dish: Spread the oatmeal mixture in the dish.
- Make Streusel: Mix oats, flour, sugar, and cinnamon. Add butter and crumble over the oatmeal.
- Bake: Bake for 35–40 minutes until set and golden. Let cool before serving.
