Streusel Topping:

  • 1/3 cup rolled oats
  • 1/4 cup almond flour or all-purpose flour
  • 1/4 cup coconut sugar or brown sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons cold butter (cubed)

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. Mix Dry Ingredients: In a large bowl, combine oats, coconut sugar, baking powder, cinnamon, nutmeg, and salt.
  3. Whisk Wet Ingredients: In another bowl, whisk eggs, milk, melted butter, and vanilla. Pour into the dry mix and stir.
  4. Fill Baking Dish: Spread the oatmeal mixture in the dish.
  5. Make Streusel: Mix oats, flour, sugar, and cinnamon. Add butter and crumble over the oatmeal.
