Description

Delight in these charming Coconut Macaroons Easter Birds Nests, a sweet and festive treat perfect for spring celebrations. Fluffy coconut macaroons baked to golden perfection are shaped into nests, drizzled with creamy melted white chocolate, and topped with colorful Cadbury mini eggs for a playful and delicious dessert.

Ingredients

Scale

Macaroon Base

  • 5 ½ cups sweetened flaked coconut
  • ¾ cup sweetened condensed milk
  • 1 teaspoon almond extract
  • 2 large egg whites
  • ¼ teaspoon salt

Decoration

  • ½ cup white chocolate chips
  • 1 package Cadbury mini eggs

Instructions

  1. Preheat and Prepare: Preheat your oven to 325°F (163°C). Line two baking sheets with parchment paper to prevent sticking and set them aside.
  2. Mix Coconut Base: In a medium bowl, combine the sweetened flaked coconut, sweetened condensed milk, salt, and almond extract. Stir thoroughly until the mixture is evenly mixed. Set this mixture aside for the next step.
  3. Beat Egg Whites: Using an electric mixer, beat the two large egg whites in a large bowl until stiff peaks form. This step is crucial to achieve a light and airy texture in the macaroons.
  4. Combine Mixtures: Carefully fold the beaten egg whites into the coconut mixture, taking care not to overmix or deflate the fluffy egg whites. Gently fold until just combined.
  5. Shape Macaroons: Drop the mixture by generous tablespoonfuls onto the prepared baking sheets, spacing them about 1 inch apart. Using your thumb, press gently into the center of each mound to form a small well or nest shape.
  6. Bake: Bake the macaroons in the preheated oven for 25 minutes, or until they are set and have a delicate golden brown color on the edges.
  7. Cool: Remove the baking sheets from the oven and transfer the macaroons to a wire rack to cool completely before decorating.
  8. Prepare Chocolate: Place the white chocolate chips in a microwave-safe bowl and melt in 30-second intervals, stirring between each, until completely smooth and melted.
  9. Decorate: Drizzle the melted white chocolate into the center of each macaroon nest. Then, carefully place three Cadbury mini eggs on top to create the appearance of an Easter bird’s nest. Allow the chocolate to set before serving.

Notes

  • Make sure egg whites are beaten to stiff peaks for a light texture in the macaroons.
  • Using parchment paper on baking sheets helps prevent sticking and makes cleanup easier.
  • Let the macaroons cool completely before adding melted chocolate to avoid melting the chocolate prematurely.
  • Store leftovers in an airtight container at room temperature for up to 3 days to maintain freshness.
  • For a nut-free version, ensure almond extract is safe or substitute with vanilla extract.
