For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 tsp cinnamon
  • 1/3 cup unsalted butter (melted)

For the Cinnamon Swirl:

  • 1/4 cup unsalted butter (melted)
  • 1/2 cup brown sugar
  • 1 tbsp ground cinnamon
  • 1 tbsp all-purpose flour

For the Cheesecake Filling:

  • 3 (8 oz) blocks cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract

For the Icing (optional):

  • 1/2 cup powdered sugar
  • 1–2 tbsp milk
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 325°F. Grease a 9-inch springform pan and wrap the bottom in foil if using a water bath.
  2. Make the crust: Combine graham cracker crumbs, sugar, cinnamon, and melted butter. Press into the pan and bake for 8 minutes.
  3. Make the cinnamon swirl: Stir together melted butter, brown sugar, cinnamon, and flour.
  4. Make the filling: Beat cream cheese and sugar, add eggs one at a time, mix in sour cream and vanilla.
  5. Layering: Pour half of the batter, add half the cinnamon swirl, repeat, and swirl with a knife.
  6. Bake: Bake for 55–65 minutes until set. Cool in the oven, then chill in the refrigerator.
  7. Make the icing: Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over the chilled cheesecake before serving.
