For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 tsp cinnamon
- 1/3 cup unsalted butter (melted)
For the Cinnamon Swirl:
- 1/4 cup unsalted butter (melted)
- 1/2 cup brown sugar
- 1 tbsp ground cinnamon
- 1 tbsp all-purpose flour
For the Cheesecake Filling:
- 3 (8 oz) blocks cream cheese (softened)
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
For the Icing (optional):
- 1/2 cup powdered sugar
- 1–2 tbsp milk
- 1/4 tsp vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 325°F. Grease a 9-inch springform pan and wrap the bottom in foil if using a water bath.
- Make the crust: Combine graham cracker crumbs, sugar, cinnamon, and melted butter. Press into the pan and bake for 8 minutes.
- Make the cinnamon swirl: Stir together melted butter, brown sugar, cinnamon, and flour.
- Make the filling: Beat cream cheese and sugar, add eggs one at a time, mix in sour cream and vanilla.
- Layering: Pour half of the batter, add half the cinnamon swirl, repeat, and swirl with a knife.
- Bake: Bake for 55–65 minutes until set. Cool in the oven, then chill in the refrigerator.
- Make the icing: Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over the chilled cheesecake before serving.
Notes
- For a stronger cinnamon roll flavor, use a cinnamon roll dough crust or top with cinnamon sugar glaze.
