Instructions
- Make the peanut butter mixture: In a medium mixing bowl, combine the creamy peanut butter, softened unsalted butter, powdered sugar, and vanilla extract. Stir thoroughly until the mixture is smooth and fully combined, forming a thick, pliable dough.
- Form the candy centers: Roll the peanut butter mixture into small, bite-sized balls about 1 inch in diameter. Place them evenly spaced on a parchment-lined baking sheet. Chill the tray in the freezer for 15-20 minutes or until the balls are firm and solidified, which makes dipping easier.
- Melt the chocolate coating: While the peanut butter balls chill, melt the semi-sweet chocolate chips with the optional coconut oil in a microwave-safe bowl. Heat in 20-second intervals, stirring between each to ensure the chocolate melts smoothly and does not burn.
- Dip the candies: Using a fork, dip each chilled peanut butter ball into the melted chocolate, making sure it’s fully coated. Gently tap the fork to remove any excess chocolate. Return the coated candies to the parchment-lined baking sheet to set.
- Set the chocolate coating: After all candies are coated, place the baking sheet in the refrigerator for another 15-20 minutes until the chocolate is completely set and firm.
