Bread:

  • 3 ripe bananas (mashed)
  • 1 ¾ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp instant espresso powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter (melted)
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or Greek yogurt
  • ¾ cup semi-sweet chocolate chips

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Prepare dry ingredients: In a medium bowl, whisk together flour, cocoa powder, espresso powder, baking soda, and salt.
  3. Mix wet ingredients: In a large bowl, whisk mashed bananas, melted butter, sugars, eggs, vanilla, and sour cream until smooth.
  4. Combine and bake: Add dry ingredients to wet, stir until just combined. Fold in chocolate chips. Pour batter into pan, bake for 55-65 minutes.
  5. Cool and serve: Let bread cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
