Almonds:

  • 1 cup raw almonds

  • 1/2 tsp vanilla extract
  • 1 tbsp maple syrup or honey (optional, for added sweetness)
  • 1/4 cup dark chocolate chips (melted)
  • Flaky sea salt for topping (optional)

Instructions

  1. Soften Dates: If dates are dry, soak them in warm water for 10 minutes, then drain well.
  2. Prepare the Mixture: In a food processor, pulse almonds until finely chopped. Add dates, cocoa powder, salt, vanilla, and maple syrup or honey if using. Process until the mixture becomes sticky and holds together when pressed.
  3. Shape the Bars: Line a small baking dish with parchment paper. Press the mixture firmly and evenly into the dish using your hands or the bottom of a glass.
  4. Add Chocolate: Pour melted chocolate over the top and spread evenly. Sprinkle with flaky sea salt if desired.
  5. Chill and Serve: Refrigerate for 1 hour or until firm. Slice into bars and store in the fridge for up to 1 week.
