  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • ½ cup semi-sweet chocolate chips (melted and slightly cooled)

For the topping:

  • 1 (21 oz) can cherry pie filling
  • Optional chocolate shavings or extra melted chocolate for garnish

Instructions

  1. Prepare the crust: Preheat the oven to 325°F (160°C). In a medium bowl, combine the chocolate cookie crumbs and melted butter until evenly mixed. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake the crust for 8–10 minutes, then remove and let cool.
  2. Make the filling: In a large bowl, beat the cream cheese until smooth. Add the sugar and mix until fully incorporated. Beat in the eggs one at a time, scraping down the sides of the bowl as needed. Stir in the vanilla extract and sour cream. Gently fold in the melted chocolate until evenly combined.
  3. Assemble and bake: Pour the filling over the cooled crust and smooth the top. Bake for 50–60 minutes, or until the center is just set and slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour. Then transfer to the refrigerator and chill for at least 4 hours, or overnight.
  4. Add topping and serve: Before serving, spoon the cherry pie filling over the top of the cheesecake and garnish with chocolate shavings if desired. Slice and serve chilled.

  • To prevent cracking, place a pan of hot water on the lower oven rack during baking.
