Instructions

  1. Roast the Sweet Potatoes: Preheat your oven to 400°F. Scrub the sweet potatoes clean and prick each a few times with a fork. Arrange them on a baking sheet and roast for 45 to 50 minutes until very tender when pierced. Allow them to cool slightly before moving to the next step.
  2. Prepare the Filling: Cut each sweet potato in half lengthwise. Carefully scoop out most of the flesh into a mixing bowl, leaving a thin layer inside the skins to help them keep their shape. Mash the sweet potato flesh with butter, olive oil, minced chipotle peppers, garlic powder, salt, black pepper, sour cream, and half of the shredded cheddar cheese until smooth and creamy. Stir in the sliced green onions for fresh flavor.
  3. Stuff the Potatoes: Spoon the creamy sweet potato mixture back into the potato skins, packing it in evenly. Sprinkle the remaining cheddar cheese over the top of each filled potato half.
  4. Bake Again: Place the stuffed potatoes back onto the baking sheet and bake in the oven for another 15 to 20 minutes, or until the cheese on top has melted and is bubbly.
