Ingredients

For the Grilled Chicken:

2 large boneless skinless chicken breasts, 2 tablespoons olive oil, 1 tablespoon chipotle seasoning or chipotle chili powder, 1 teaspoon garlic powder, ½ teaspoon cumin, ½ teaspoon salt, ½ teaspoon black pepper,

For the Burrito:

4 large flour tortillas, 1 cup cooked rice, 1 cup black beans (drained and rinsed), 1 cup shredded cheddar or Mexican blend cheese, 1 cup shredded lettuce, 1 medium tomato (diced), ½ avocado (sliced), ½ cup chipotle ranch dressing, optional: chopped cilantro, lime wedges for serving


Instructions

  1. Prepare the Grilled Chicken: In a small bowl, combine olive oil, chipotle seasoning, garlic powder, cumin, salt, and pepper. Rub the mixture evenly over both sides of the chicken breasts. Preheat a grill or grill pan over medium-high heat. Grill chicken for 5–6 minutes per side, or until fully cooked and internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes before slicing into strips.
  2. Assemble the Burritos: Warm tortillas in a dry skillet or microwave until soft and pliable. To assemble the burritos, layer rice, black beans, grilled chicken, cheese, lettuce, tomato, avocado, and a drizzle of chipotle ranch dressing in the center of each tortilla.
  3. Roll Up the Burritos: Fold in the sides, then roll up tightly from the bottom to form a burrito. Serve warm, cut in half if desired, and garnish with fresh cilantro or lime wedges.
