Description

This Chipotle Honey Chicken and Rice Bake is a flavorful and easy one-pan dinner that combines sweet and smoky flavors with tender chicken, fluffy rice, and a cheesy topping. Perfect for a busy weeknight or a cozy family meal.


Ingredients

Chicken and Rice:

  • 1 1/2 lbs boneless, skinless chicken thighs or breasts
  • 1 cup long-grain white rice (uncooked)
  • 2 1/4 cups chicken broth

Chipotle Honey Sauce:

  • 2 tbsp olive oil
  • 2 tbsp honey
  • 12 chipotle peppers in adobo sauce (minced)
  • 1 tbsp adobo sauce from the can
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Optional Toppings:

  • 1/2 cup shredded Monterey Jack or cheddar cheese
  • Chopped fresh cilantro and lime wedges for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Whisk together olive oil, honey, chipotle peppers, adobo sauce, garlic powder, paprika, cumin, salt, and pepper.
  3. Spread rice in baking dish, pour chicken broth over it, and stir to distribute evenly.
  4. Nestle chicken over the rice and coat with chipotle honey mixture.
  5. Cover with foil and bake for 40–45 minutes until rice is tender and chicken is cooked.
  6. Sprinkle cheese over chicken, broil for 2–3 minutes until melted.
  7. Rest for 5 minutes before serving. Garnish with cilantro and lime wedges.

Notes

  • For extra veggies, add corn, black beans, or bell peppers to the rice before baking.
  • Adjust spice level by using more or less chipotle pepper.
