This Chipotle Honey Chicken and Rice Bake is a flavorful and easy one-pan dinner that combines sweet and smoky flavors with tender chicken, fluffy rice, and a cheesy topping. Perfect for a busy weeknight or a cozy family meal.

Chicken and Rice:
- 1 1/2 lbs boneless, skinless chicken thighs or breasts
- 1 cup long-grain white rice (uncooked)
- 2 1/4 cups chicken broth
Chipotle Honey Sauce:
- 2 tbsp olive oil
- 2 tbsp honey
- 1–2 chipotle peppers in adobo sauce (minced)
- 1 tbsp adobo sauce from the can
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
Optional Toppings:
- 1/2 cup shredded Monterey Jack or cheddar cheese
- Chopped fresh cilantro and lime wedges for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Whisk together olive oil, honey, chipotle peppers, adobo sauce, garlic powder, paprika, cumin, salt, and pepper.
- Spread rice in baking dish, pour chicken broth over it, and stir to distribute evenly.
- Nestle chicken over the rice and coat with chipotle honey mixture.
- Cover with foil and bake for 40–45 minutes until rice is tender and chicken is cooked.
- Sprinkle cheese over chicken, broil for 2–3 minutes until melted.
- Rest for 5 minutes before serving. Garnish with cilantro and lime wedges.
Notes
- For extra veggies, add corn, black beans, or bell peppers to the rice before baking.
- Adjust spice level by using more or less chipotle pepper.
