Description

This Chicken Ramen Stir Fry is a quick and flavorful meal combining tender chicken strips, fresh veggies, and chewy ramen noodles all tossed in a savory soy-ginger sauce. It’s perfect for a weeknight dinner, ready in just 30 minutes, and packed with vibrant colors and satisfying textures.

Ingredients

Scale

Protein

  • 2 boneless, skinless chicken breasts (about 1 lb or 450 g), sliced into thin strips

Noodles

  • 2 packs of instant ramen noodles (discard the seasoning packets)

Vegetables

  • 1 red bell pepper, sliced into thin strips
  • 1 yellow bell pepper, sliced into thin strips
  • 1 cup broccoli florets
  • 1 cup carrots, julienned or sliced thinly
  • 3 green onions, sliced (for garnish)

Sauces and Oils

  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil

Seasonings & Aromatics

  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • Salt and pepper to taste

Instructions

  1. Cook the noodles: Boil the ramen noodles in water for 3-4 minutes until just tender, then drain and set aside to prevent overcooking.
  2. Marinate the chicken: Season the sliced chicken breasts with salt, pepper, and a splash of soy sauce and let them marinate for about 10 minutes to enhance the flavor.
  3. Prepare vegetables: Slice the red and yellow bell peppers into thin strips, julienne the carrots, and break the broccoli into small florets for even cooking.
  4. Cook the chicken: Heat 1 tablespoon of sesame oil in a skillet over medium-high heat, then stir-fry the marinated chicken for 5-7 minutes until it turns golden brown and is cooked through.
  5. Sauté aromatics and vegetables: Add the remaining sesame oil, minced garlic, and grated ginger to the skillet and sauté for about 30 seconds until fragrant. Then add the prepared vegetables and stir-fry for 3-5 minutes until crisp-tender.
  6. Combine and toss: Return the cooked chicken to the skillet, pour in soy sauce, and mix well. Add the cooked ramen noodles and toss everything together to heat through and combine flavors evenly.
  7. Season and garnish: Taste and adjust the seasoning with additional salt or pepper if needed. Garnish with sliced green onions and serve warm for a delicious, complete meal.

Notes

  • Discard the seasoning packets from the ramen noodles as they often contain excess sodium and preservatives.
  • Feel free to swap vegetables according to preference or seasonality, such as adding snap peas or mushrooms.
  • For extra crunch, sprinkle toasted sesame seeds while serving.
  • If you prefer a spicier dish, add a dash of chili flakes or sriracha.
  • This recipe is best served immediately, but leftovers can be stored in the refrigerator for up to 2 days and reheated gently.
