Ingredients
Scale
Protein
- 2 boneless, skinless chicken breasts (about 1 lb or 450 g), sliced into thin strips
Noodles
- 2 packs of instant ramen noodles (discard the seasoning packets)
Vegetables
- 1 red bell pepper, sliced into thin strips
- 1 yellow bell pepper, sliced into thin strips
- 1 cup broccoli florets
- 1 cup carrots, julienned or sliced thinly
- 3 green onions, sliced (for garnish)
Sauces and Oils
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
Seasonings & Aromatics
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- Salt and pepper to taste
Instructions
- Cook the noodles: Boil the ramen noodles in water for 3-4 minutes until just tender, then drain and set aside to prevent overcooking.
- Marinate the chicken: Season the sliced chicken breasts with salt, pepper, and a splash of soy sauce and let them marinate for about 10 minutes to enhance the flavor.
- Prepare vegetables: Slice the red and yellow bell peppers into thin strips, julienne the carrots, and break the broccoli into small florets for even cooking.
- Cook the chicken: Heat 1 tablespoon of sesame oil in a skillet over medium-high heat, then stir-fry the marinated chicken for 5-7 minutes until it turns golden brown and is cooked through.
- Sauté aromatics and vegetables: Add the remaining sesame oil, minced garlic, and grated ginger to the skillet and sauté for about 30 seconds until fragrant. Then add the prepared vegetables and stir-fry for 3-5 minutes until crisp-tender.
- Combine and toss: Return the cooked chicken to the skillet, pour in soy sauce, and mix well. Add the cooked ramen noodles and toss everything together to heat through and combine flavors evenly.
- Season and garnish: Taste and adjust the seasoning with additional salt or pepper if needed. Garnish with sliced green onions and serve warm for a delicious, complete meal.
Notes
- Discard the seasoning packets from the ramen noodles as they often contain excess sodium and preservatives.
- Feel free to swap vegetables according to preference or seasonality, such as adding snap peas or mushrooms.
- For extra crunch, sprinkle toasted sesame seeds while serving.
- If you prefer a spicier dish, add a dash of chili flakes or sriracha.
- This recipe is best served immediately, but leftovers can be stored in the refrigerator for up to 2 days and reheated gently.
