Cream Cheese Filling:

  • 8 ounces cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract

Additional Ingredients:

  • 1 can (21 ounces) cherry pie filling
  • 12 egg roll wrappers
  • Vegetable oil for frying
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Prepare Cream Cheese Filling: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Assemble Egg Rolls: Lay out an egg roll wrapper on a clean surface with one corner pointing toward you. Spread about 1 tablespoon of the cream cheese mixture in the center, then top with 1 tablespoon of cherry pie filling. Fold the bottom corner up over the filling, then fold in the sides and roll tightly, sealing the edge with a little water.
  3. Fry the Egg Rolls: Heat 2–3 inches of vegetable oil in a deep skillet or pot to 350°F (175°C). Fry the egg rolls in batches for 2–3 minutes per side, or until golden brown and crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain.
  4. Coat with Cinnamon Sugar: In a small bowl, mix the granulated sugar and cinnamon. While the egg rolls are still warm, roll them in the cinnamon sugar mixture until coated.
  5. Serve: Serve warm, dusted with extra powdered sugar if desired.

Notes

  • These can also be baked at 400°F (200°C) for about 15 minutes if you prefer a lighter version.
