Ground Turkey Mixture:

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • 1/4 tsp cumin
  • Salt and pepper, to taste

Sweet Potato Base:

  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1/2 cup low-sodium chicken broth or water

Additional Ingredients:

  • 1 cup shredded cheddar cheese
  • Chopped fresh parsley or green onions for garnish

Instructions

  1. Heat olive oil: In a large skillet, heat olive oil over medium heat.
  2. Cook sweet potatoes: Add diced sweet potatoes and cook for 5–7 minutes until they begin to soften.
  3. Sauté onions and garlic: Add onion and garlic, sauté for 2–3 minutes.
  4. Cook ground turkey: Push vegetables to the sides, add ground turkey to the center, cook until browned.
  5. Season and simmer: Stir in seasonings, pour in broth, cover, and simmer for 8–10 minutes.
  6. Add cheese: Sprinkle shredded cheese over the top, cover and cook for 1–2 minutes until melted.
  7. Garnish and serve: Garnish with parsley or green onions, serve warm.
