Sweet Potato Base:
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 1/2 cup low-sodium chicken broth or water
Additional Ingredients:
- 1 cup shredded cheddar cheese
- Chopped fresh parsley or green onions for garnish
Instructions
- Heat olive oil: In a large skillet, heat olive oil over medium heat.
- Cook sweet potatoes: Add diced sweet potatoes and cook for 5–7 minutes until they begin to soften.
- Sauté onions and garlic: Add onion and garlic, sauté for 2–3 minutes.
- Cook ground turkey: Push vegetables to the sides, add ground turkey to the center, cook until browned.
- Season and simmer: Stir in seasonings, pour in broth, cover, and simmer for 8–10 minutes.
- Add cheese: Sprinkle shredded cheese over the top, cover and cook for 1–2 minutes until melted.
- Garnish and serve: Garnish with parsley or green onions, serve warm.
