Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon low-sugar taco seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 (10 oz) can diced tomatoes with green chilies, drained
- 4 ounces cream cheese, softened
- 1½ cups shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- 1 small zucchini, diced (optional)
- ½ cup chopped bell pepper (optional)
- 2 tablespoons chopped cilantro (optional)
- Sliced green onions, avocado, or sour cream for garnish
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C). Lightly grease an 8×8-inch or 9×9-inch baking dish.
- Cook the ground beef: In a large skillet over medium heat, cook the ground beef, onion, and garlic until browned. Drain any excess grease.
- Combine ingredients: Stir in taco seasoning, salt, pepper, and drained tomatoes. Add cream cheese and mix until melted. Add optional zucchini and bell pepper.
- Transfer to baking dish: Place the mixture in the baking dish. Top with cheddar and Monterey Jack cheese.
- Bake: Bake for 15–18 minutes until cheese is melted. Let cool for 5 minutes before serving with garnishes.
