  • 1 (10 oz) can diced tomatoes with green chilies, drained
  • 4 ounces cream cheese, softened
  • 1½ cups shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 1 small zucchini, diced (optional)
  • ½ cup chopped bell pepper (optional)
  • 2 tablespoons chopped cilantro (optional)
  • Sliced green onions, avocado, or sour cream for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C). Lightly grease an 8×8-inch or 9×9-inch baking dish.
  2. Cook the ground beef: In a large skillet over medium heat, cook the ground beef, onion, and garlic until browned. Drain any excess grease.
  3. Combine ingredients: Stir in taco seasoning, salt, pepper, and drained tomatoes. Add cream cheese and mix until melted. Add optional zucchini and bell pepper.
