Instructions
- Preheat and Prepare: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking and aid with easy cleanup.
- Cook the Ground Beef: In a skillet over medium heat, cook the ground beef until browned and fully cooked, then drain excess grease to reduce fat content.
- Simmer with Seasoning: Stir in the taco seasoning and water, then simmer the mixture for 3 to 5 minutes until it thickens to enhance the flavor.
- Add Sauces: Mix in the red enchilada sauce and salsa until well combined, creating a rich and tangy sauce base.
- Layer the Casserole: Spread a thin layer of the beef mixture on the bottom of the prepared baking dish, then arrange the frozen beef taquitos in a single layer over the sauce.
- Top with Remaining Beef and Cheese: Pour the remaining beef mixture evenly over the taquitos and sprinkle 1 1/2 cups of shredded Mexican blend cheese on top to add creamy, melted flavor.
- Bake: Bake uncovered for 25 minutes in the preheated oven until the casserole is heated through and bubbly.
- Add More Cheese: Remove the casserole from the oven, sprinkle the remaining 1/2 cup of cheese on top, and return it to the oven for 5 more minutes until the cheese is fully melted and gooey.
