Description

A simple and flavorful cauliflower steak recipe that is roasted to golden perfection with a seasoned olive oil blend. This vegan and gluten-free dish makes a perfect main course or side, featuring aromatic spices and optional fresh parsley or lemon for garnish.

Ingredients

Scale

Cauliflower Steaks

  • 1 large head of cauliflower
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • Salt and pepper to taste
  • Chopped fresh parsley or lemon wedges for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F and line a baking sheet with parchment paper to prepare for roasting.
  2. Prepare Cauliflower: Remove the leaves from the cauliflower and trim the stem while leaving the core intact to help keep the steaks together.
  3. Slice Cauliflower: Cut the cauliflower into ¾-inch thick steaks, usually yielding 2 to 3 full slices per head. Extra florets that fall off can be saved for another use.
  4. Mix Seasoning: In a small bowl, combine olive oil, garlic powder, smoked paprika, ground cumin, salt, and pepper to create a flavorful brush-on seasoning.
  5. Season Steaks: Brush both sides of each cauliflower steak thoroughly with the seasoned olive oil mixture ensuring they are well coated.
  6. Roast: Place the steaks on the prepared baking sheet and roast in the oven for 20–25 minutes, flipping halfway through, until the steaks are golden brown and tender inside.
  7. Garnish and Serve: Garnish with fresh chopped parsley or a squeeze of lemon juice for added brightness, and serve as a main dish or hearty side.

Notes

  • Serve as a main dish accompanied by grains or a sauce such as chimichurri for added flavor.
  • The steaks can alternatively be grilled over medium heat for 5–7 minutes per side for a smoky char.
