Cream Cheese Frosting:
- 4 oz cream cheese (softened)
- 2 tablespoons unsalted butter (softened)
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat Oven: Preheat oven to 350°F and prepare an 8×8-inch baking pan.
- Mix Dry Ingredients: Combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
- Prepare Wet Ingredients: In a separate bowl, mix oil, sugars, eggs, and vanilla until smooth.
- Combine Mixtures: Gently fold dry ingredients into wet ingredients. Stir in carrots, pineapple, and nuts (if using).
- Bake: Pour batter into the pan and bake for 25–30 minutes until a toothpick comes out clean. Cool.
