Wet Ingredients:

  • 2 large eggs
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1½ cups finely grated carrots
  • ½ cup crushed pineapple, drained
  • ½ cup chopped walnuts or pecans (optional)

Cream Cheese Frosting:

  • 4 ounces cream cheese, softened
  • 2 tablespoons butter, softened
  • 1½ cups powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Prepare Wet Ingredients: In a large bowl, beat eggs, brown sugar, granulated sugar, oil, and vanilla until smooth. Stir in carrots and pineapple.
  4. Combine and Bake: Add dry ingredients to wet ingredients and mix. Fold in nuts if using. Spread batter in the pan and bake for 25–30 minutes.
  5. Make Frosting: Beat cream cheese and butter until creamy. Add powdered sugar and vanilla, beat until smooth.
  6. Frost and Serve: Spread frosting over cooled bars and cut into squares to serve.

Notes

  • For extra flavor, add ¼ cup shredded coconut to the batter.
