California Roll Salad is a deconstructed take on the popular sushi roll, featuring all the flavors you love in an easy-to-make salad. This recipe combines sushi rice, crab meat, avocado, cucumber, and a spicy mayo dressing for a refreshing and satisfying meal.

Sushi Rice:
- 2 cups cooked sushi rice, cooled
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1/2 tsp salt
Salad Toppings:
- 1 cup imitation crab meat, shredded
- 1 avocado, diced
- 1 cucumber, diced
- 1 sheet nori, cut into thin strips
- 2 tbsp mayonnaise
- 1 tsp soy sauce
- 1 tsp sriracha (optional)
- 1 tbsp sesame seeds, toasted
- 2 green onions, sliced
Instructions
- Prepare Sushi Rice: In a small bowl, mix rice vinegar, sugar, and salt into the cooked rice. Spread the rice into a serving bowl.
- Make Crab Mixture: In another bowl, combine shredded crab meat with mayonnaise and soy sauce (add sriracha for spice).
- Assemble Salad: Top the rice with crab mixture, avocado, cucumber, nori strips, sesame seeds, and green onions. Toss gently before serving or layer for presentation.
Notes
- For added crunch, include sliced radishes or shredded carrots.
- Real crab can be used instead of imitation crab.
- To increase heartiness, serve with extra rice or create a sushi burrito bowl.
