California Roll Salad is a deconstructed take on the popular sushi roll, featuring all the flavors you love in an easy-to-make salad. This recipe combines sushi rice, crab meat, avocado, cucumber, and a spicy mayo dressing for a refreshing and satisfying meal.

Sushi Rice:

  • 1 cucumber, diced
  • 1 sheet nori, cut into thin strips
  • 2 tbsp mayonnaise

Instructions

  1. Prepare Sushi Rice: In a small bowl, mix rice vinegar, sugar, and salt into the cooked rice. Spread the rice into a serving bowl.
  2. Make Crab Mixture: In another bowl, combine shredded crab meat with mayonnaise and soy sauce (add sriracha for spice).
  3. Assemble Salad: Top the rice with crab mixture, avocado, cucumber, nori strips, sesame seeds, and green onions. Toss gently before serving or layer for presentation.

Notes

  • For added crunch, include sliced radishes or shredded carrots.
  • Real crab can be used instead of imitation crab.
