Instructions

  1. Activate Yeast: In a large mixing bowl, combine the warm water, granulated sugar, and active dry yeast. Allow to sit for 5 minutes until the mixture becomes foamy, indicating the yeast is active.
  2. Make Dough: Add the flour, salt, and 2 tablespoons of melted butter to the yeast mixture. Mix until a rough dough forms. Knead the dough on a floured surface for 5–7 minutes until smooth and elastic, or use a stand mixer fitted with a dough hook for about the same time.
  3. First Rise: Place the kneaded dough into a greased bowl, cover it with a clean towel or plastic wrap, and let it rise in a warm spot for 45–60 minutes until it doubles in size.
  4. Preheat & Prepare: Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper. Bring 6 cups of water and the baking soda to a rolling boil in a large pot.
  5. Shape Pretzel Bites: After the dough has risen, punch it down to release air. Divide it into 4 equal portions. Roll each portion into a long rope about 18–20 inches in length, then cut the ropes into 1-inch pieces to form bite-sized pretzels.
