Puff Pastry:

  • 1 sheet (14 oz) puff pastry, thawed

Sausage Filling:

  • 1 pound pork sausage meat (or high-quality pork sausages with casings removed)
  • 1/4 cup breadcrumbs
  • 1 small onion, finely chopped
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Egg Wash:

  • 1 egg, beaten
  • 1 tablespoon milk (optional, to loosen egg wash)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the Filling: In a bowl, mix the sausage meat, breadcrumbs, onion, sage, thyme, salt, and pepper until well combined.
  3. Roll Out Pastry: On a floured surface, roll the puff pastry into a 10×12-inch rectangle. Cut it in half lengthwise.
  4. Fill and Shape: Divide the sausage mixture in half. Form each into a log and place one on each pastry strip. Fold pastry over meat, seal edges, and cut into smaller rolls.
  5. Bake: Arrange rolls on the baking sheet, brush with egg wash, and bake for 20–25 minutes until golden and cooked through.
