Instructions

  1. Heat the oil: Warm 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat to prepare for sautéing the aromatics.
  2. Sauté garlic and ginger: Add minced garlic and grated ginger to the hot oil and cook for about 30 seconds until fragrant, releasing their aroma into the oil.
  3. Cook mushrooms: Add the sliced mushrooms and sauté for 4–5 minutes, stirring occasionally, until they soften and start to brown, developing a rich flavor.
  4. Add bok choy: Toss in the baby bok choy and cook for 2–3 minutes, stirring frequently until it wilts but remains crisp and vibrant green.
  5. Prepare and add sauce: Mix soy sauce, oyster sauce, and rice vinegar in a small bowl, then pour over the vegetables. Toss well to evenly coat the stir fry.
  6. Thicken sauce (optional): Stir in the cornstarch slurry and cook for another 1–2 minutes, allowing the sauce to thicken slightly and cling to the veggies.
  7. Finish and serve: Remove from heat, sprinkle toasted sesame seeds over the stir fry, and serve hot over cooked rice.
