Beef Stew:

- 3 tablespoons unsalted butter, divided
- 2 tablespoons olive oil

- 4 slices thick-cut bacon, chopped
- 2 large onions, thinly sliced
- 3 garlic cloves, minced
- 2 cups Belgian beer (such as dubbel or brown ale)
- 2 cups beef broth
- 2 tablespoons brown sugar
- 2 tablespoons apple cider vinegar
- 2 tablespoons Dijon mustard
- 3 sprigs fresh thyme (or 1 teaspoon dried thyme)
- 2 bay leaves
- 1 tablespoon fresh parsley, chopped, for garnish
Instructions
- Prepare Beef: Pat beef dry, season with salt and pepper, and dredge in flour.
- Brown Beef: Brown beef in batches in a Dutch oven.
- Cook Bacon: Cook bacon until crispy, then set aside.
- Caramelize Onions: Cook onions until golden, then add garlic.
- Deglaze: Deglaze with beer, add broth, sugar, vinegar, mustard, thyme, and bay leaves.
