  • 2 cups Belgian beer (such as dubbel or brown ale)
  • 2 cups beef broth
  • 2 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 3 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 2 bay leaves
  • 1 tablespoon fresh parsley, chopped, for garnish

Instructions

  1. Prepare Beef: Pat beef dry, season with salt and pepper, and dredge in flour.
  2. Brown Beef: Brown beef in batches in a Dutch oven.
  3. Cook Bacon: Cook bacon until crispy, then set aside.
