Description

Beef Lombardi is a comforting and hearty casserole featuring layers of seasoned ground beef, egg noodles, a creamy sour cream mixture, and gooey cheddar cheese. This classic American dish is perfect for a family dinner and can be made ahead and frozen for convenience.

Ingredients

Scale

For the Beef Mixture:

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

For the Noodle and Cheese Layers:

  • 8 ounces egg noodles
  • 1 cup sour cream
  • 1/2 cup cottage cheese
  • 1/4 cup chopped green onions
  • 1 1/2 cups shredded cheddar cheese
  • 1 tablespoon olive oil (for cooking)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet, sauté onion in olive oil until translucent. Add garlic and cook. Brown ground beef, drain excess fat, then add tomatoes, sauce, paste, and seasonings. Simmer.
  3. Cook noodles according to package. Mix sour cream, cottage cheese, and green onions in a bowl.
  4. Layer noodles, sour cream mixture, beef sauce, and cheddar cheese in the baking dish. Bake for 25–30 minutes.
  5. Rest for 5–10 minutes before serving.

Notes

  • This casserole freezes well—prepare, cover tightly, and freeze before baking.
  • Ricotta can be used instead of cottage cheese, and ground turkey can substitute beef.
