Lasagna Rolls
- 8 lasagna noodles
- 1 pound lean ground beef
- 1 packet (1 ounce) taco seasoning mix
- 4 ounces cream cheese, softened
- 1 can (10 ounces) mild red enchilada sauce
- 2 cups shredded cheddar cheese

Instructions
- Preheat and cook noodles: Preheat your oven to 350°F (175°C). Bring a large pot of water to a boil and cook the lasagna noodles according to package directions until al dente. Drain the noodles and lay them flat on parchment paper to prevent sticking.
- Prepare beef filling: In a large skillet over medium heat, cook and brown the ground beef until no longer pink. Drain excess grease. Stir in the taco seasoning packet along with the amount of water called for on the seasoning mix package. Bring to a boil, then reduce heat and let simmer for 10 minutes. Remove from heat.
- Prepare baking dish: Pour half of the enchilada sauce evenly into the bottom of a 9×13 inch baking dish to create a flavorful base for the rolls.
- Assemble lasagna rolls: Spread about 2 tablespoons of softened cream cheese down the center of each lasagna noodle. Spoon a few tablespoons of the seasoned beef mixture on top of the cream cheese layer, then sprinkle with cheddar cheese. Roll each noodle tightly into a cylinder. Repeat for all noodles.
- Arrange and top rolls: Place the assembled lasagna rolls seam-side down in the prepared baking dish. Pour the remaining enchilada sauce over the tops of the rolls and sprinkle evenly with the remaining shredded cheddar cheese.
- Bake and serve: Bake uncovered in the preheated oven for 25 minutes or until the cheese is melted, bubbly, and slightly golden. Remove from oven and let stand for 5 minutes before serving.
