Instructions
- Heat the olive oil and 1 tablespoon of the butter: in a large saucepan over medium heat. Add the sliced leeks and cook until soft and translucent, about 5 minutes.
- Stir in the garlic: and cook for 1 more minute.
- Add the Arborio rice: and cook, stirring constantly, for 1–2 minutes until lightly toasted.
- Pour in the white wine: and stir until fully absorbed.
- Begin adding the warm vegetable broth: one ladle at a time, stirring frequently and allowing each addition to absorb before adding the next.
- Continue this process for 20–25 minutes: or until the rice is tender and creamy.
- Stir in the remaining tablespoon of butter, goat cheese, Parmesan cheese, salt, and pepper.
- Mix in the chopped basil: and remove from heat. Let sit for 2 minutes before serving. Garnish with lemon zest if desired.

- For best results, keep the broth warm throughout the cooking process to maintain an even temperature.
- Add sautéed mushrooms, peas, or asparagus for variation.
- Use a splash of lemon juice for brightness if preferred.
