Description

These Bang Bang Chicken Skewers are a delicious Asian-inspired dish with tender chicken pieces grilled to perfection and coated in a sweet and spicy sauce. Perfect for a quick and flavorful meal!

For the Chicken Skewers:

  • 1 ½ pounds boneless, skinless chicken breasts cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • wooden skewers soaked in water (if using)

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tablespoon Sriracha (more or less to taste)
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar

Instructions

  1. Marinate the Chicken: In a large bowl, combine olive oil, soy sauce, honey, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken cubes and toss to coat. Marinate in the fridge for at least 30 minutes.
  2. Prepare the Bang Bang Sauce: Whisk together all ingredients for the sauce in a small bowl until smooth. Set aside.
  3. Grill the Chicken: Preheat a grill over medium heat. Thread the marinated chicken onto skewers. Grill for 4-5 minutes per side until cooked through with grill marks. Brush with some of the Bang Bang Sauce during the last minute of grilling.
  4. Serve: Serve hot with extra sauce drizzled on top or on the side for dipping.

Notes

  • For extra flavor, marinate the chicken overnight.
  • These skewers can also be baked at 400°F for 18-20 minutes, flipping halfway through.
  • Garnish with chopped green onions or sesame seeds if desired.
