Description

These Banana Blondies combine the rich, moist texture of classic blondies with the natural sweetness and flavor of ripe bananas. Topped with a luscious brown butter frosting, this easy-to-make dessert is perfect for banana lovers and makes a great treat for any occasion.

Ingredients

Scale

Blondie Batter

  • 1 cup salted butter, melted
  • 1 ½ cups packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup mashed banana (about 2 ½ medium-sized bananas)

Brown Butter Frosting

  • ¼ cup salted butter
  • ½ cup packed light brown sugar
  • 2 tablespoons milk
  • 1 cup powdered sugar

Instructions

  1. Prepare the oven and pan: Preheat your oven to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper and spray the parchment with cooking spray to prevent sticking. Set aside.
  2. Make the blondie batter: In the bowl of an electric stand mixer, combine melted butter and light brown sugar. Mix until well combined. Add eggs and vanilla extract, mixing until incorporated. Stir in salt, all-purpose flour, and mashed bananas until the batter is smooth and evenly mixed.
  3. Bake the blondies: Pour the batter evenly into the prepared baking dish and spread it out. Bake in the preheated oven for 25 minutes, or until the center is set and a toothpick inserted comes out clean. Remove from oven and let the blondies cool completely before frosting.
  4. Make the brown butter frosting: In a medium saucepan over medium-low heat, melt the butter until it starts to barely brown and emits a rich, nutty aroma—this should take a couple of minutes. Be careful not to burn the butter. Add the brown sugar and milk, stirring until the mixture comes to a gentle boil. Remove from heat and allow to cool for 5 minutes.
  5. Finish the frosting: Whisk in the powdered sugar until smooth and well combined, forming a thick frosting.
  6. Frost the blondies: Spread the brown butter frosting evenly over the completely cooled blondies. Allow the frosting to set before cutting into squares.
  7. Serve: Cut into 24 squares and enjoy your delicious banana blondies!

Notes

  • Ensure the blondies are fully cooled before frosting to prevent the frosting from melting.
  • Use ripe bananas for the best natural sweetness and flavor.
  • The brown butter frosting adds a deep, nutty taste that complements the banana blondies beautifully.
  • If you prefer a sweeter or thicker frosting, adjust the powdered sugar accordingly.
  • Storing leftovers in an airtight container at room temperature will keep them fresh for up to 3 days.
