Chicken:

Sauce:
- 2 tablespoons butter
- 3 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 1½ cups baby spinach
- ½ cup heavy cream
- ½ cup grated Parmesan cheese
- ¼ cup sun-dried tomatoes (chopped)
- ½ cup shredded mozzarella cheese
- fresh basil or parsley for garnish (optional)
Instructions
- Preheat oven: Preheat oven to 375°F.
- Season and sear chicken: Rub chicken breasts with olive oil and season with Italian seasoning, garlic powder, salt, and pepper. Sear in a skillet until golden and set aside.
- Make the sauce: In the same skillet, melt butter, sauté garlic, add cherry tomatoes, spinach, cream, Parmesan, and sun-dried tomatoes. Simmer until thickened.
- Bake: Return chicken to skillet, top with sauce and mozzarella. Bake for 18–22 minutes.
- Garnish and serve: Garnish with basil or parsley before serving.
