Sauce:

  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1½ cups baby spinach
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ cup sun-dried tomatoes (chopped)
  • ½ cup shredded mozzarella cheese
  • fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat oven: Preheat oven to 375°F.
  2. Season and sear chicken: Rub chicken breasts with olive oil and season with Italian seasoning, garlic powder, salt, and pepper. Sear in a skillet until golden and set aside.
  3. Make the sauce: In the same skillet, melt butter, sauté garlic, add cherry tomatoes, spinach, cream, Parmesan, and sun-dried tomatoes. Simmer until thickened.
