For the Chicken:
- 4 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Sauce:
- 3 garlic cloves, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1 1/4 cups heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 tablespoon fresh basil, chopped (optional)
Instructions
- Preheat the Oven: Preheat the oven to 400°F (200°C).
- Season and Sear the Chicken: Rub the chicken breasts with olive oil, Italian seasoning, garlic powder, paprika, salt, and black pepper. Sear the chicken in a skillet until golden brown, then set aside.
- Prepare the Sauce: Sauté garlic in the skillet, then add cherry tomatoes, sun-dried tomatoes, heavy cream, chicken broth, and Parmesan cheese. Stir until smooth, then add spinach and cook until wilted.
- Bake: Return the chicken to the skillet, spoon sauce over it, and bake for 20-25 minutes until chicken reaches 165°F (74°C).
- Serve: Garnish with fresh basil if desired and serve warm.
