  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika

  • 1/4 teaspoon black pepper

For the Sauce:

  • 3 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 1/4 cups heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tablespoon fresh basil, chopped (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C).
  2. Season and Sear the Chicken: Rub the chicken breasts with olive oil, Italian seasoning, garlic powder, paprika, salt, and black pepper. Sear the chicken in a skillet until golden brown, then set aside.
  3. Prepare the Sauce: Sauté garlic in the skillet, then add cherry tomatoes, sun-dried tomatoes, heavy cream, chicken broth, and Parmesan cheese. Stir until smooth, then add spinach and cook until wilted.
  4. Bake: Return the chicken to the skillet, spoon sauce over it, and bake for 20-25 minutes until chicken reaches 165°F (74°C).
