  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1 cup cottage cheese
  • 4 large eggs
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Toppings:

  • 1 cup mixed berries (fresh or frozen)
  • nonstick cooking spray

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease four oven-safe ramekins or small bowls with nonstick cooking spray.
  2. Prepare the batter: In a blender, combine the oats, cottage cheese, eggs, protein powder, baking powder, cinnamon, salt, honey, and vanilla. Blend until smooth.
  3. Fill the ramekins: Divide the batter evenly among the ramekins, filling each two-thirds full. Top with berries, pressing them gently into the batter.
