- Preheat Oven: Preheat your oven to 425°F (218°C) to ensure it is hot and ready for baking the fries.
- Prep the Potatoes: Rinse and scrub the russet potatoes thoroughly to remove dirt, then dry completely. Cut them into matchstick slices about ¼ to ½ inch thick. Place the potato slices in a large bowl, drizzle with olive oil, and toss to coat evenly. Sprinkle 1 teaspoon salt and black pepper over the potatoes and toss again to distribute the seasoning.
- Bake the Fries: Line a large half sheet pan with parchment paper or use two regular-sized baking sheets. Spread the potato slices in a single layer, avoiding overcrowding so fries crisp well. Sprinkle ¼ cup of the grated Parmesan cheese evenly over the fries. Bake in the preheated oven for 35-40 minutes, flipping fries halfway through the cooking process. When flipping, sprinkle an additional ¼ cup Parmesan cheese and spread fries back into a single layer.
- Make the Garlic Butter: While fries finish baking, melt butter in a small saucepan over medium heat. Add the finely minced garlic and cook for 1-2 minutes, stirring constantly, until the garlic just begins to brown. Remove from heat immediately to prevent burning.
- Season and Serve: Transfer the baked fries to a large bowl. Pour the melted garlic butter over them, add the remaining ½ teaspoon salt, remaining ¼ cup Parmesan cheese, and chopped fresh parsley.
