Feta Pasta:
- 1 (8-ounce) block feta cheese
- 2 cups cherry or grape tomatoes
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
Pasta:
- 8 ounces pasta (such as penne, rotini, or shells)
- 1/4 cup chopped fresh basil
- Optional: baby spinach or arugula for added greens
Instructions
- Preheat the oven: Preheat the oven to 400°F.
- Prepare the feta: In a medium baking dish, place the block of feta cheese in the center and surround it with the cherry tomatoes. Drizzle with olive oil, garlic, red pepper flakes, salt, and pepper.
- Bake: Bake for 30-35 minutes until tomatoes burst and feta is golden and soft.
- Cook the pasta: Cook pasta according to package instructions. Reserve pasta water.
- Combine: Remove dish from oven, mash feta and tomatoes into a creamy sauce. Add cooked pasta, reserved water, chopped basil, and greens. Stir well.
- Serve: Serve warm and enjoy!
