Description

This vibrant and flavorful Baked Feta Eggs recipe combines roasted cherry tomatoes, bell peppers, and red onions with creamy baked feta cheese and perfectly cooked eggs. Enhanced with aromatic herbs and spices, this dish is a delightful and wholesome breakfast or brunch option that’s easy to prepare and serves four.

Ingredients

Scale

Vegetables

  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • ½ small red onion, diced
  • 3 cloves garlic, minced
  • 1 cup chopped baby spinach

Dairy & Eggs

  • 8 ounces feta cheese
  • 4 large eggs

Oils & Seasonings

  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon dried thyme
  • ½ teaspoon ground black pepper
  • ½ teaspoon red pepper flakes

Optional Garnish

  • Chopped fresh basil or chives

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) to ensure it reaches the perfect temperature for roasting.
  2. Prepare the Base: In an oven-safe dish, combine the cherry tomatoes, diced red bell pepper, diced red onion, and minced garlic. Place the block of feta cheese in the center of the dish and drizzle the olive oil evenly over the vegetables and feta.
  3. Season the Dish: In a small bowl, mix together dried oregano, sea salt, dried thyme, ground black pepper, and red pepper flakes. Sprinkle this seasoning blend evenly over the entire dish to enhance flavors.
  4. Bake Vegetables & Feta: Place the dish in the oven and bake for 25 minutes, allowing the vegetables to become tender and the feta to soften and get slightly golden.
  5. Add Spinach: Remove the dish from the oven and stir in the chopped baby spinach, distributing it evenly throughout the vegetables and feta.
  6. Add the Eggs: Create four small wells in the vegetable and feta mixture. Crack one egg into each well carefully, making sure the yolks remain intact.
  7. Final Bake: Return the dish to the oven and bake for an additional 10 minutes, or until the egg whites are fully set but the yolks remain runny to your preference.
  8. Garnish & Serve: Once baked, sprinkle chopped fresh basil or chives over the top for a fresh herb aroma and serve the dish warm with crusty bread or your favorite side.

Notes

  • For firmer egg yolks, bake for an additional 2-3 minutes after the final bake step.
  • Use an oven-safe dish large enough to hold the ingredients without overcrowding for even roasting.
  • Crusty bread or toasted pita pairs beautifully with this dish to soak up the delicious juices.
  • Fresh herbs can be adjusted based on preference; parsley or dill also work well as garnishes.
  • This recipe can be doubled to serve larger groups, just use a larger baking dish and adjust baking times accordingly.
