Ingredients

Scale

Beef Marinade

  • 1 lb flank steak, thinly sliced against the grain
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch

Vegetables and Aromatics

  • 3 cups snow peas, trimmed
  • 8 oz mushrooms (shiitake or cremini), sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 green onions, sliced

Sauce and Seasonings

  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1/4 cup beef broth or water
  • 1 tablespoon rice vinegar
  • 2 tablespoons vegetable oil (divided)
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. Marinate the Beef: In a bowl, combine the thinly sliced flank steak with soy sauce, cornstarch, and sesame oil. Toss well to coat each piece evenly and let the beef marinate for 15–20 minutes to tenderize and absorb the flavors.
  2. Cook the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer and cook for 2–3 minutes on each side until browned and just cooked through. Remove the beef from the pan and set it aside to keep warm.
  3. Sauté Aromatics and Mushrooms: In the same pan, add the remaining 1 tablespoon of vegetable oil. Sauté the minced garlic and ginger for about 30 seconds until they become fragrant, being careful not to burn them. Then add the sliced mushrooms and cook for 3–4 minutes until they release their moisture and start to brown.
  4. Add Snow Peas: Stir in the trimmed snow peas and sauté everything together for an additional 2 minutes, allowing the snow peas to become tender-crisp.
  5. Combine and Simmer: Return the cooked beef to the pan with the vegetables. Pour in the oyster sauce, hoisin sauce, rice vinegar, and beef broth or water. Stir everything thoroughly to evenly coat the ingredients. Let the mixture simmer for 2–3 minutes so the sauce thickens slightly and flavors meld together.
  6. Season and Garnish: If desired, add red pepper flakes to add a bit of heat. Season with salt and pepper to taste. Finally, garnish the stir-fry with sliced green onions and sesame seeds before serving hot.

Notes

  • You can substitute snow peas with sugar snap peas or broccoli florets depending on what you have available.
  • For a gluten-free version, replace soy sauce with tamari and use a gluten-free hoisin sauce.
  • Serve this stir-fry over steamed rice or noodles for a complete and satisfying meal.
