Scale
Dry Ingredients
- 2 cups old-fashioned rolled oats
- 1/2 cup chopped dried apples
- 1/2 cup chopped nuts (such as walnuts or almonds)
- 1/4 cup ground flaxseed
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
Wet Ingredients
- 1/2 cup almond butter or peanut butter
- 1/3 cup honey or maple syrup
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper to prevent sticking and make removal easier.
- Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped dried apples, chopped nuts, ground flaxseed, ground cinnamon, and salt. Stir until evenly mixed.
- Melt Wet Ingredients: In a small saucepan over low heat, gently heat the almond butter, honey (or maple syrup), and coconut oil, stirring constantly until the mixture is melted and smooth. Remove from heat.
- Add Vanilla: Stir the vanilla extract into the warm wet mixture to enhance the flavor.
- Combine Mixtures: Pour the wet mixture over the dry ingredients in the large bowl. Stir thoroughly until all the dry ingredients are fully coated and the mixture is well combined.
- Press Into Pan: Transfer the mixture to the prepared baking pan. Use a spatula or your hands to press it firmly and evenly into the pan to ensure the bars hold together after baking.
- Bake: Place the pan in the preheated oven and bake for 15 to 18 minutes, or until the edges turn golden brown.
- Cool and Slice: Remove the pan from the oven and allow the granola bars to cool completely in the pan. Once cooled, lift them out using the parchment paper and slice into 12 bars.
Notes
- For a nut-free version, substitute almond butter with sunflower seed butter and replace nuts with pumpkin seeds.
- Add mini chocolate chips or dried cranberries for extra sweetness and flavor variety.
- Store granola bars in an airtight container at room temperature for up to 5 days, or refrigerate to extend shelf life.
