Instructions

  1. In a medium saucepan, combine the oats, milk, grated carrot, grated apple, cinnamon, nutmeg, ginger, maple syrup, vanilla extract, and a pinch of salt.
  2. Stir well and bring to a gentle boil over medium heat. Reduce heat to low and simmer for 5–7 minutes, stirring occasionally, until the oats are soft and the mixture is creamy.

  3. If using, stir in the chopped nuts and raisins. Adjust sweetness to taste.
  4. Spoon the oatmeal into bowls and serve warm with a splash of extra milk and a drizzle of maple syrup if desired.

  • For a vegan version, use plant-based milk and maple syrup.
